    How do you make a truly great 'Prawn Pil-Pil'?

    For many years, my favourite dish in Spain has been 'Prawn / Gambas Pil-Pil'. You can't beat sitting in a good restaurant, or even better in a chiringuito with a sizzling dish of king prawns in a delicious pil-pil sauce. Wonderful!

    Granted, I am no Gordon Ramsey, but I can boil an egg and make toast, so why is it so difficult for me to cook king prawns, oil, garlic and chilli to create anything that tastes even half way decent?.

    I am appealing to the YourMarbella community to teach me how to make a truly great prawn pil-pil, like they make at Mistral Beach and Alfredo's in San Pedro.

    I will await your advice!

    Heres one I found earlier!

     

    Prawns or Gambas Pil Pil Recipe
    (Sizzling Prawn dish from Spain)

    There are a few variations of Gambas Pil Pil (prawns pil pil) but the basic concept is the same. If you can try and get a few small eartenware heat proof dishes as this just adds to the autenticity of the prawns pil pil. If you don't have any or can't get any then don't worry as you can cook in the gambas pil pil in a large frying pan and serve on to a large dish.

    The ingredients for Gambas Pil Pil (Prawns Pil Pil):

    100ml (3.5 fl oz / half a cup) of good quality olive oil (preferably Spanish olive oil)


    4 garlic cloves very thinly sliced (you can crush the garlic if you prefer but personally I prefer slithers of garlic floating around in my prawns pil pil)


    1 small fresh red chilli seeded and chopped (again this is a matter of choice, for additional heat leave the seeds in and thinly slice instead. I have also seen gambas pil pil made with dried chillis)


    350g of raw gambas (prawns), peeled and salted (if you cannot get fresh prawns or do not like cooking with them then you can use pre-cooked prawns but adjust the cooking time so as to warm through thorougly as opposed to cooking them)


    2 tablespoons of chopped fresh parsley


    lemon wedges and bread to serve

    The method for cooking prawns pil pil

    Heat the olive oil in each individual earthenware dish (or the frying pan) over a high heat. Add garlic and chilli and cook for 1 to 2 mintues making sure that they do not burn. Then add the sea salt and prawns and cook for a further 2 to 3 minutes at a brisk pace. (remember to adjust timing if using pre-cooked gambas). Stir in the parsley.

    Serve quickly so that the prawns are still sizzling in the cooking juices and accompany with bread and lemon wedges.

     

    Langostinos - These are large prawns more like what we would call king prawns or tiger prawns back in the UK.

    Gambas - These are smaller prawns which are availbale in different sizes and are best compared to north Atlantic prawns.

    These can be purchased fresh and uncooked, fresh and cooked or frozen. Mercadona sell both fresh and frozen all year around and has one of the best fish counters in the area.

    I cook mine the same as above and had great results, trick is to put the thinly sliced garlic in right at the last moment though otherwise it just burns in the oil. You must have the earthenware dishes too (can buy them anywhere cheaply) as eating them without it spitting burning oil over your arms just doesn't feel right

    Can get just as good results using those dried chillies in a jar as fresh too

    Hi, My girlfriend went to a dinner party two weeks ago and they followed these instructions and the Pil-Pil went down a treat. Still to try it myself though....

    Hi, I have used this recipe a couple of times in the last fortnight and it is spot on. Andy, I can now see what you mean about dropping in the garlic at the last minute, it tastes much better than when it burns !

    I still can't re-create the taste of the Pil Pil at Restaurante Alfredo's in San Pedro though, still the best I have ever tasted !

    Yeah but I bet Alfredo can't make beans on toast as good as you now can he? !

    Hi Christian, I have always made my own, with garlic ,chillies,oil, large Prawns, large dash of sweet chilli sauce and at the end I add a large tablespoon of strawberry Jam leaving it in for 2mins Dont know where that idea came from but the taste is great............

    Hi Andy,

    It is on Calle AndalucĂ­a, Local 8. I am not the best in the world when it comes to directions, but I will have a go!. If you are driving from Puerto banus take the main road to San Pedro, and keep going as if you were going to Salamanca Car Dealership. Just before you get to Salamanca ( I think it is one or maybe two turn off's before) , there is an exit just before another car dealer called U.S. Auto's or U.S Motors, it is a while building. Turn right up the road and go for around 100 metres before taking your first right. On this road there are cars parked on both sides, which obstruct your view of the restaurants on the left hand side of the road, as they are below the road level. Alfredo's takes up about half of this parade of restaurants. If you know 'Bar Charlie' in San Pedro, then Alfredo's is a stone's throw up the road from it.
